Recipe for Carrot Tzimmes


1 cookie criden (nbvx45b)
1 lb carrots, peeled and grated
1 large yam, peeled and grated
1 lb granny smith apples, peeled
1/4 lb prunes coarsely chopped
1/4 cup white raisins
1/4 cup dried, pitted cherries
1/2 cup brown sugar, packed
1 cup crushed pineapple--don't dra
1/2 cup matzo meal
1 pinch nutmeg
1 pinch salt
1 pinch cardamom (optional)
1/4 lb margarine, melted and divide
1 tablespoon brown sugar
1 teaspoon cinnamon
1 tablespoon matzo meal
1 reserved melted margarine


1. Mix together all ingredients except the topping ingredients and only half of the margarine. 2. Coat a terrine, souffle dish or individual ramekins with margarine. 3. Pour mixture into prepared dish. 4. Combine topping ingredients and spread over top. 5. Bake at 350 deg. for 1 1/2 to 2 hours. 6. It can be prepared a day ahead, but bake the day you want to eat it. 7. Serves 6 to 8.
