Recipe for Cajun Couche Couche


1/4 cup oil
1 1/2 teaspoon salt
3/4 cup milk
2 cup corn meal
1 teaspoon baking powder
3/4 cup water


Heat oil in heavy iron pot. Mix dry ingredients, add milk and water; batter will be soft. Pour batter into hot oil, let crust form on bottom before stirring. Reduce to low heat and stir occasionally until cooked, about 15 minutes. Serve in bowl with milk and sugar as a cereal.
