Recipe for Bean Burrito Casserole


2 cup tomato sauce
3 cup ; water
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
3 tablespoon chili powder
4 tablespoon cornstarch or arrowroot

5 cup pinto beans; mashed
1 cup green onions; cooked
1/2 cup black olives; chopped
12 whole wheat tortillas


Sauce: Combine all sauce ingredients in a saucepan. Cook, stirring constantly, until mixture boils and thickens, about 7 minutes.

Casserole: Place casserole ingredients in separate bowls.

To assemble: Spread 1 cup sasuce in the bottom of a coverfed casserole dish. Fill each tortilla with a mixture of the beans, green onions and olives. Roll up and place seam side down in the casserole dish. Pour remaining sauce over the rolled-up tortillas. Cover and bake at 350 degrees for 30 minutes.

Variation: Substitute 2 cups of rice for 2 cups of beans.

Yield: 6 servings
