Recipe for Pork Roast Dijon


3 lb pork roast; rolled boneless
1 cup white wine
3 tablespoon mustard; dijon
1/2 teaspoon pepper
1 cup cream
3 tablespoon capers; chopped


Rub pepper into roast. Place fat side up on a rack in a roasting pan. Cook in 375 F oven for 45 - 55 minutes, until done. Remove roast; keep warm on a serving platter. Skim fat from the roasting pan. Deglaze with white wine over high heat, about 3 minutes. Add mustard, cream, capers and any juice from pork roast. Cook until reduced by almost half. Serve over the sliced pork roast.
