Recipe for Almond Holiday Rice


1 cup mahatma (r) rice
1 medium onion, chopped
1 garlic clove, minced
4 teaspoon bbutter, divided
1/2 cup chopped almonds, toasted
1 can chopped pimientos (1 oz)
2 can mushrooms, drained and chopped (2.5; oz)
1 salt to taste
1 pepper to taste
1/2 cup whipping cream
1 cayenne pepper


Preheat oven to 350'F.

Prepare rice according to package direction. Set aside. In a medium skillet saute onion and garlic in butter. Add almonds, pimientos, mushrooms, salt and pepper. Fold in cooked rice.

Fold mixture into an oiled 2-quart baking dish. Pour whipping cream over rice mixture. Bake at 350'F. for about 15 minutes, or until thoroughly heated. Sprinkle with cayenne pepper.
