Recipe for Greek Brochettes


500 gm (1 lb) lean lamb, cubed
200 gm (7 oz) pitted black olives
300 gm (10 oz) goat's cheese or fetta che; ese, cubed
250 gm (8 oz) cherry tomatoes
2 tablespoon olive oil
2 tablespoon chopped fresh thyme
2 teaspoon grated lemon rind
2 teaspoon cracked black pepper


Thread lamb, olives, cheese and cherry tomatoes onto metal skewers.

Place oil, thyme, lemon and pepper in a small bowl and mix to combine.

Brush over brochettes and bbq until tender, turning frequently and brushing with thyme baste.
