Recipe for Baked Vegetable Pasta


1 lb mostaccioli or ziti
1 tablespoon olive oil
2 each cloves fresh garlic, minced, or 1 t; sp bottled
1 medium onion, finely minced
4 each carrots
2 cup broccoli, cut in small pieces
1 1/2 teaspoon oregano
1 teaspoon basil
32 oz tomato sauce, commercial or homemad; e


Preheat oven to 350F. Prepare pasta as directed on package. Drain well. Heat oil in wok or large skillet, add garlic and onion, stir fry 1 minutes, and add carrots, broccoli, oregano and basil. Spread 1/2 cup tomato sauce in bottom of 10x13 baking dish. Layer pasta, vegetable mixture and tomato sauce. Top off with any remaining tomato sauce. Place in oven, and bake for 20 minutes, or until heated through.
