Recipe for Indonesian Chicken Skewers


3 whole chicken breasts
1 cup chunky peanut butter
1/3 cup chopped cilantro
1/2 cup chili sauce
1 tablespoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/4 cup lemon juice
1/4 cup brown sugar
1/2 cup soy sauce
8 green onions, minced
3 tablespoon minced garlic
2 sweet bell peppers, cubed


1. Slice each breast into strips. 2. Soak wooden skewers in water for at least 30 min. 3. In stainless steel or glass bowl, combine peanut butter, cilantro, chili sauce, salt, cayenne, black pepper, lemon juice, sugar, soy sauce, green onion and garlic. Add chicken breasts and let marinate for 2 DAYS. 4. Preheat broiler or prepare a charcoal fire. 5. On skewers, thread chicken strips like serpents with pepper cubes interspersed. Broil or grill for 5-6 min, turning once.

Make sure the chicken breasts are fresh as they have to marinate for 2 days.
