Recipe for Meringue Kisses


6 egg whites
1/2 teaspoon salt
1 1/2 cup sugar
1 teaspoon lemon or orange rind; grated


Beat egg whites until stiff. Add salt and beat again. Beat in sugar gradually; add grated rind. When well mixed, spoon into a pastry bag with a star-shaped tip. Squeeze out onto a greased and floured cookie sheet. Bake in a slow oven (250F.) about 45 mins, or until dry and a little golden. The yield will depend on size of cookie.
