Recipe for Cajun Beans Over Corm Muffins


1/2 each pk frozen corn muffins (3 muffins); 8 oz can stewed tomatoes
1 teaspoon instant chicken bouillon granules; 1 tsp minced onion
1/8 teaspoon garlic powder
1/2 cup shredded cheddar cheese
1 each - 15 oz can great northern beans
1 tablespoon diced dried green pepper
1 each or 2 drops tabasco sauce


Bake muffins per package. Combine undrained beans, undrained tomatoes, and all but cheese in medium sauce pan. Bring to a boil, reduce heat, cover and simmer 10 minutes. Split muffins. Spoon beans over muffins and sprinkle with cheese.
