Recipe for Cajun Crab Soup


12 each crabs
1/4 lb butter
2 each ribs celery , chopped
1 large onion, minced
8 slice lemon, slices
1 each egg, hard boiled, chopped fine 6; tbs sherry
1 salt and pepper to taste
1 1/2 tablespoon flour
1 can tomatoes (#2 can)
3 each sprig thyme
4 each sprig parsley, minced
1 1/2 teaspoon paprika


Clean and halve crabs. Melt butter and add flour, mixing constantly until golden brown. Add onions and let simmer for 5 minutes. Add crabs and then pour in 3 cups of HOT water. Simmer for 5 minutes. Mix in tomatoes, celery, thyme, parsley, and 6 cups HOT water. Let boil vigorously about 1/2 hour. Add sherry, lemon, hard boiled egg, paprika, salt and pepper. (if soup becomes to thick, pour in Hot water until desired consistency is reached) Let simmer for 1/2 hour. Serves six
