Recipe for Crab Chops Recipe


3 each green onions - minced
3 tablespoon butter or margarine
2 tablespoon flour
1 cup milk
1 lb crabmeat
20 each saltine crackers - crumbled
1 each egg - beaten
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 each dashes tabasco
1 crackermeal or bread crumbs for dre; dging
1 butter and vegetable oil for frying
1 boiled crab claws for garnish (opti; onal)


Saute onions in butter or margarine. Alternate adding flour and milk, stirring constantly to make a medium-thick white sauce. Remove from heat and add crabmeat, cracker crumbs, egg, salt and cayenne pepper. Gently mix together and set aside to cool thoroughly. Shape into 6 patties and dredge in cracker meal or bread crumbs. Put about 1/2-inch of equal parts vegetable oil and butter in a skillet and fry patties on both sides until they are golden brown.
