Recipe for Creole Rice


1 cup long-grain rice
1 cup finely chopped onion
1 each clove garlic, minced
2 tablespoon vegetable oil
1 cup chicken broth
1 cup tomato sauce (8oz)
1/2 cup green onion, sliced
1/2 cup green pepper, diced
1/2 teaspoon salt
1/4 teaspoon pepper
1 single grated cheese, optional


Combine rice, onion, garlic, green onion, and oil in microwave dish. Microwave at high power for 3 minutes. Stir in chicken broth, tomato sauce, green pepper, salt, and pepper. Cover. Microwave at high power for 20 minutes, stirring after 10 minutes, until rice is hot and tender. Let sit 5 minutes, covered, before serving.
