Recipe for Quick Ginger Chicken


1/3 cup water
3 tablespoon soy sauce
2 tablespoon cooking sherry (optional)
1 tablespoon corn starch
1 teaspoon sugar
1 1/2 teaspoon minced fresh ginger, or 1/2 ts drie; d ginger
3 tablespoon corn oil, divided
2 red or green peppers, cut into stri; ps
6 green onions, cut into 2 pieces
1 large garlic clove, minced
2 whole chicken breasts, skinned, bon; ed, cut into 1 chucks


Stir water, soy sauce, sherry, corn starch, sugar and ginger until smooth; set aside. In large skillet heat 1 tbsp. corn oil over medium-high heat. Add peppers, green onions, and garlic; saute 4 minutes. Remove. Add remaining 2 tbsp. corn oil; heat, Add chicken; saute 5 minutes or until lightly browned. Stir corn starch mixture. Add to skillet with vegetables. Stirring constantly, bring to boil over medium heat; boil 1 minute. If desired, serve with rice.
