1 can tuna in water (6 1/2 oz.)
1 can cannellini beans, rinsed in cold wa; ter
1 and drained (15-19 oz.) or
1 can great northern beans, rinsed in col; d water
1 and drained (15-19 oz.)
1 small red onion, finely diced
1 each stalk celery, finely diced
1/4 cup italian parsley, minced (flat leaf)
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon dijon mustard
1/8 teaspoon cayenne pepper
1 freshly ground pepper and salt to t; aste
n a large bowl, break up the tuna into large pieces. Add the rest of the ingredients and toss. Serve immediately at room temperature or chill until needed.
