Recipe for Florentine Meat Foldovers


1/2 lb beef hamburger
1/4 lb pork sausage
1 small onion
1 each clove garlic
10 each spinach, cook and drained
1 salt and pepper to taste
6 each tortillas
1/2 cup oil
1 1/2 oz tomato sauce
16 can tomatoes
1 teaspoon italian seasoning (or combo of basi; l, oregano etc)
1 cup mozzarella cheese, shredded


Brown the hamburger and sausage with the onion and garlic. Drain excess fat off. Stir in the spinach and season with salt and pepper. In medium skillet, heat tortilla shells in hot oil until softened but not crisp. Meanwhile, heat tomatoes, tomato sauce and italian seasoning. Put meat mixture in tortilla shells and roll up. Arrange in casserole dish, pour the tomato mixture over top. Sprinkle with cheese and bake in a 350F oven for about 30 minutes. Makes 6 servings.
