Recipe for Pan-Fried Ropa Vieja


1/2 lb flank steak
1 vegetable oil spray
1/2 medium onion; sliced
2 carrots; thinly sliced (1 c)
2 centiliter garlic; crushed
1/2 medium green pepper; sliced
1 can (4.5 oz) whole tomatoes
1 teaspoon dried oregano
1/2 cup sliced pimentos
1 salt & pepper to taste


Cut meat into paper-thin slices. Spray a medium-size nonstick skillet with vegetable oil spray. Saute meat 2 minutes. Remove to a plate. In same pan, saute onions and carrots 5 minutes. Add garlic and green pepper and saute 5 more minutes. Add tomatoes and oregano. Break up tomatoes with a spoon as they cook. Simmer 5 minutes. Return meat to pan. Mix well. Add pimentos, salt and pepper. Cook 1 minute. Serve over rice.
