Recipe for Belmar Chowder Pot For 4


1 tablespoon olive oil
3 shallots, diced
1 banana pepper; seeded and diced
1 carrot; diced
2 red potatoes; cubed
1 tomato; skinned and cubed
1 pinch saffron
1 pinch nutmeg
1 pinch cloves; ground
1 pinch dill
1 lb monkfish; in 1-in cubes
1 water; or fish stock, clam juice
1 orange; sliced very thin


Heat oil and saute shallots and pepper until they soften. Add vegetables and spices. Heat to simmer and cook 5 minutes. Add fish and simmer another 15 minutes. Serve garnished with 1 or 2 thin slices of orange.
