Recipe for Chef Freddy's Fruited Chicken


2 1/2 lb chicken pieces [boneless
1 preferred]
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoon vegetable oil
1 can (21oz) fruit pie filling
1/2 cup white wine [dry]
1/2 cup lime juice
1/4 cup light brown sugar [packed]
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon cloves [ground]


1) Rinse chicken and pat dry. Season with salt and pepper, then brown in a skillet in the oil for 10 min. on each side, drain... 2) Combine pie filling, wine, lime juice, brown sugar, and spices in a bowl and mix well... 3) Arrange chicken in a microwave safe casserole, and spoon the fruit sauce over it... Cover and nuke on low setting for 20 min or `til the chicken is no longer pink and is fork tender... 4) Serve over hot cooked noodles or rice...
