Recipe for Tuscan Parmesan Pillows


1 1/2 lb ground beef round
3 cloves garlic; crushed
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper
1 cup parmesan cheese; grated
1/3 cup chopped parsley
1 tablespoon olive oil
1 tablespoon butter
1/3 cup chopped parsley
1 lemon wedges


1. Mix meat-mixture ingredients (first 6) until well blended. Shape into twelve 1 1/4-inch thick patties. Let stand 15 minutes.

2. Heat oil and butter in a large heavy nonstick skillet over medium-high heat.

3. Add patties and cook until well browned on both sides and no longer pink in centers, about 5 minutes.
