Recipe for Maandazi (East African Doughnut)

Ingredients

1 1/4 cup flour
2 tablespoon sugar
1 teaspoon baking powder
1 teaspoon ground cardamon pinch of salt
1 egg
1/4 cup milk oil for frying

Instructions

Mix together the dry ingredients. Mix in egg and milk until well blended. Roll out as for a jelly roll to about 3/4 inch thickness. Cut using a doughnut cutter with center ring removed. Fry in hot (365 degree) oil until golden brown. May roll in confectioners' sugar before serving.
