Recipe for Curry Spread


1 each onion
2 each garlic cloves
1/4 cup margarine
1 tablespoon curry powder
1 1/3 cup tomato ketchup
1 teaspoon cider vinegar
2 each bay leaves
12 each whole cloves


Slice onions & chop garlic finely. Heat margarine & saute the onion & garlic in it until they brown. Stir in the curry powder & add the ketchup with the rest of the ingredients. Simmer for about 20 minutes, until it thickens. Remove bay leaves & cloves.

This is best served hot on wholewheat toast or chilled on crackers. It is quite rich, so spread thinly.
