Recipe for Mushroom Roll-Ups


1/2 lb mushrooms, minced
1/4 cup butter
1 cup light cream
3 tablespoon flour
3/4 teaspoon salt
2 teaspoon chives
1 teaspoon lemon juice
1 each loaf very thinly sliced white bread


Saute' mushrooms in butter. Stir in 1 cup light cream and cook until thick. Add remaining ingredients except bread. Cut crusts off bread. Roll bread with a rolling pin until thin. Spread mixture on bread and roll up. Slice in thirds. (Do not cut if you plan to put in freezer.) Bake 10 minutes at 400 F. Recipe can be doubled by adding 8 ounces of lobster meat. Yield: 3-1/2 dozen.
