Recipe for Baja Beef Casserole


1 lb ground beef; (chicken or turkey)
12 oz (1 jar) chunky salsa
1 cup sweet corn
3/4 cup mayonnaise; (low-fat/cal)
1 tablespoon chili powder
2 cup crushed tortilla chips; divided
2 cup (8-oz) jack cheese; (low-fat/cal)


Heat oven to 350 F. Brown meat and drain. Stir in salsa, corn, mayonnaise and chili powder. Layer 1/2 mixture, chips, and cheese in 2 quart casserole. Repeat layers. Bake 20 minutes or until thoroughly heated. Top with shredded lettuce and chopped tomato if desired. Serves 6.
