Recipe for Sweet Potato Casserole


3 lb sweet potatoes
1/2 cup butter
1/2 cup firmly packed brown sugar
1/4 cup sugar
2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg large marshmallows


Scrub sweet potatoes and cook in boiling water covered for 40 to 50 minutes, or until fork-tender. Drain and rinse under cold water to stop cooking process; drain on paper towels. Peel when cool enough to handle; mash with butter. Beat in next 5 ingredients with an electric mixer. Spread in a shallow greased 1 1/2-quart baking dish and bake in a preheated 350 degree oven for 20 minutes. Cover top with marshmallows; bake 10 to 15 additional minutes or until marshmallows are melted and lightly browned.
