Recipe for Sweet Potato-Apple Casserole


6 medium sweet potatoes (about 5 lbs)
4 medium apples, cored and thinly sliced (ab; out 1 lb)
1/2 cup firmly packed brown sugar
1/2 cup chopped walnuts or pecans
1/4 cup (1/2 stick) butter or margarine, me; lted
1/4 cup fresh orange juice
1 tablespoon freshly grated orange peel
1 teaspoon cinnamon
1/4 teaspoon mace


Pierce potatoes with fork. Arrange on microwave-safe rack. Cook on High 20 min, turning halfway through cooking time. Peel potatoes and slice thinly. Arrange apples in shallow glass or ceramic baking dish. Sprinkle with sugar. Layer potato slices evenly over apples. Sprinkle nuts over potatoes. Combine remaining ingredients in small bowl. Pour over top. Cover and cook on high until apples are tender, 5 to 7 min. Serve warm.
