Recipe for Washington Lima Bean And Pear Casserole


1 lb dried lima beans, washed and draine; d
6 cup water
1 salt and pepper to taste
1/2 cup melted butter or margarine
1 cup firmly packed light brown sugar
2 1/2 cup pear halves, cubed


Put beans in kettle, add water, and bring to a boil. Boil for 2 minutes, cover pan and let stand for 1 hour. Then simmer until tender; add more hot water if necessary. Drain, and season. Mix butter and brown sugar and a little syrup from pears. In a large casserole, alternate layers of beans and pears. Spread each layer with butter-sugar mixture. Top layer should be pears. Spread with remaining sugar mixture. Cover and bake in preheated slow over (325F) for about 2 hours. Makes 6 servings.
