2 tablespoon vegetable oil
3/4 lb chicken breasts, cut into 1/2 piece; s
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped red pepper
1 cup chunky salsa (hot)
2 cup shredded cheddar
1 can corn & red pepper sour cream tortil; la chips
Heat oil and cook chicken 2 minutes. Add onion and peppers. Cook until tender. Drain if necessary. Add chunky salsa and drained corn and 1/2 of cheese. Simmer over low heat until cheese is melted. Just before serving sprinkle rest of cheese over top and add dollop of sour cream.
