Recipe for Mushroom Salad (Hungarian Style)


2 lb firm fresh mushrooms
1 each onion, diced
1 tablespoon vinegar
3/4 cup sour cream or plain yogurt salt & p; epper (to taste)
1 tablespoon parsley, finely diced
1 cup bell peppers, diced
2 each cloves of garlic, minced
1 tablespoon lemon juice
1 teaspoon paprika


Clean and trim the mushrooms, blanch for 1-2 minutes in boiling salted water. Drain mushrooms and set aside. Mix the onion, garlic, green pepper, lemon juice and vinegar. Season to taste with salt & pepper. Blend in the sour cream and stir until smooth. Add in the mushrooms. Note: if the mushrooms are large half or quarter them. Stir until the mushrooms are well coated with the dressing. Sprinkle with parsley and paprika when serving.
