Recipe for Matzah Kugel


3 matzah pieces
6 eggs
1/2 cup sugar
1/4 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup raisins; seedless
4 apples, tart, grated
1 orange; grated rind off of
1/2 cup almonds, chopped
1/4 teaspoon cinnamon; sprinkled
1 tablespoon sugar; sprinkled
1/4 cup margarine; melted


Crumble pieces of matzah into water and soak until soft (DO NOT DROWN); squeeze out the excess moisture. Beat the eggs. Add sugar, salt and cinnamon, beating til well blended. Stir crumbled matzahs, raisins, almonds, apples and orange rind into the egg mixture.

Turn into well greased 1 1/2 quart casserole . Sprinkle with more cinnamon and sugar and pour the melted margarine on top of it.

Bake at 350 degrees for about 45 - 50 minutes, until firm and nicely brown.
