Recipe for Horseradish Sauce


1/2 cup freshly grated horseradish
2 egg yolks
1 teaspoon salt
1/4 teaspoon freshly ground white pepper
1 slice bread, crust removed
1/4 cup milk
1 cup olive oil
3 tablespoon sherry wine vinegar


Whisk horseradish, egg yolks, salt and pepper in medium-size bowl. Soak bread in milk in small bowl 1 minute. Remove bread, squeezing out excess milk. Whisk bread into horseradish mixture. Whisk in 1/4 cup of the oil drop by drop. Whisk in remaining oil in slow, steady stream. Whisk until sauce is thick. Whisk in vinegar.
