Recipe for Pasta Primavera


4 teaspoon olive oil
1 clove garlic
1/2 cup chopped onion
1 cup sliced zucchini
3/4 cup sliced mushrooms
1 cup broccoli flowerettes
1/4 cup chicken broth or water
3/4 cup halved cherry tomatoes
1/4 cup chopped parsley
1 teaspoon lemon juice
1 teaspoon dried basil
1/2 teaspoon dried oregano black pepper
2 cup cooked drained spaghetti
2 oz shredded mozzarella cheese
6 tablespoon grated parmesan cheese


In large skillet, heat olive oil, add garlic, onion, zucchini and mushrooms, saute until onion is translucent. Add broccoli and broth. Cover and steam 5-7 minutes or until broccoli is tender crisp. Add tomatoes, parsley, lemon juice and seasonings. Toss thoroughly. Serve over spaghetti. Sprinkle with Parmesan and Mozzarella cheese. Makes 4 servings.
