Recipe for Imperial Sesame Pickerel

Ingredients

2 teaspoon toasted sesame seeds
1/4 cup soy sauce
2 teaspoon vinegar
2 teaspoon minced fresh ginger root
1/2 teaspoon sugar
1/2 cup water
1 1/2 lb pickerel or other fillets
2 teaspoon cornstarch
2 green onions, chopped

Instructions

In a mortar, grind sesame seeds. Brush sesame powder into a small sauce pan and add soy sauce, vinegar, ginger, sugar and water and mix together. Brush both sides of fish with some of the sauce. Broil about 5 minutes, or until fish flakes easily when tested with a fork. Meanwhile, blend cornstarch with the remaining mixture in the saucepan. Bring to boil; cook and stir until sauce thickens. Just before serving, spoon sauce over cooked fish. Sprinkle with chopped green onion and serve.
