Recipe for Salisbury Steaks


2 lb ground beef
2 eggs, slightly beaten
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup finely chopped onion (optional)
1/2 cup fresh fine bread crumbs
3 tablespoon margarine
1/4 lb fresh mushrooms, sliced
1 tablespoon oil
1 1/2 cup beef broth
2 tablespoon flour


Combine first 5 ingredients in mixing bowl. Shape into oval patties. Sprinkle both sides of patties with bread crumbs, and >> press crumbs into patties. Chill in refrigerator at least 30 minutes. Melt 2 Tbsps. margarine in a hot, heavy skillet. Saute mushrooms. Remove them from skillet; add oil and remaining margarine. Add patties, and brown. Remove to a platter. Add broth to pan drippings. Blend flour with a small amount of cold water to form a paste. Add to skillet, and bring to a boil, stirring until smooth and thick. Add mushrooms and stir. Add steaks, and simmer until done, about 20 minutes.
