Recipe for Oven Barbecued Chicken Quarters


1 cup chili sauce
2 tablespoon firmly packed brown sugar
2 tablespoon spicy brown mustard
1 teaspoon liquid red pepper seasoning
4 whole broiler-fryer legs (thigh and; drumstick)
1 skin removed (about 2 pounds)


In a large bowl, combine chili sauce, brown sugar, mustard, and red pepper seasoning. Add chicken; turn to coat well, cover. Chill 1 hour, turning occasionally. Preheat oven to 350 F. Line a jelly-roll pan with foil. Place chicken in pan; reserve sauce. Bake 1 hour, basting several times with sauce, or until chicken is tender.

Makes 4 servings.
