Recipe for Buffalo Chip Cookies


1 cup butter or margarine
1 cup shortening
1 lb brown sugar
2 cup oatmeal
1 pkg 6 oz chocolate chips
2 cup sugar
4 each eggs
2 teaspoon vanilla
4 cup flour, all-purpose
2 teaspoon baking soda
1 cup pecans
1 cup coconut
2 teaspoon baking powder
2 cup rice krispies


You'll need to start with a big bowl for this one. If this is your first try, you might want to do a half-batch.

Cream butter and shortening. Add brown sugar, eggs, sugar and vanilla. Sift and add the flour, baking powder, baking soda; add oatmel, chocolate chips, pecans, Rice Krispies and coconut. Use 1/4 measured cup per cookie or ice cream scoop. Put on ungreased cookie sheet, 6 to a sheet. Cook 15 minutes at 350 F; let cool 5 minutes before removing from sheet. Makes 30-40 cookies.
