Recipe for Minted Prunes


2 1/2 cup cooked prunes
1 1/2 cup liquid drained from prunes
1/3 cup cider vinegar
1 cup brown sugar, packed
1/2 teaspoon cinnamon
1/8 teaspoon salt
3/4 each to 1 teasp. mint extract


In saucepan, combine prunes, liquid, vinegar, sugar, cinnamon, salt. Boil gently, covered 15 min. Remove from heat; stir in extract. Cover; let cool. Use to garnish fruit salads. Or pit and stuff prunes with cream cheese; serve on lettuce; pass French dressing. Makes 2 1/2 cups.
