Recipe for Hopping Jack


1 teaspoon olive oil
2 large cloves garlic, minced
1 large onion, finely chopped
1/2 teaspoon minced jalapeno pepper
1 large green pepper, seeded and finely cho; pped or
2 each poblano peppers, seeded and finely; chopped
1/2 lb baked ham, cut into cubes
2 can black beans, rinsed and drained wel; l (15 oz. ea.)
1/4 cup tomato paste
1 teaspoon brown sugar
1/4 teaspoon allspice
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1 *use black eye peas for hopping joh; n.


In a large saucepan, saute garlic and onion in the oil over medium heat for a minute or so, then adding the hot and green peppers, cooking for another minute. Add the remaining ingredients and simmer for 10-15 minutes, adding a little water if it gets too thick. Serve with rice and any topping you prefer.
