Recipe for Mushroom Saute With Zucchini And Italian Sausage


2 link poultry italian sausage
1 tablespoon oil
2 tablespoon garlic; chopped
3/4 lb mushrooms; sliced
3/4 lb zucchini; cut in 1/2 cubes
1/2 cup parsley; chopped
1 salt and pepper


Poke sausage in serveral places; place in skillet with 1/2 cup water. Cover and steam cook over low heat for 5 minutes. Uncover and continue cooking until water has evaporated and sausage is lightly browned and cooked throughout. Remove sausage from skillet and slice into 1/2" rounds. Heat the oil in the skillet and stir fry the garlic, mushrooms and zucchini until crisp tender. Return sausage to skillet and season to taste. Stir fry 1 more minute. Toss in the parsley and serve.
