Recipe for Shallot Bruschetta

Ingredients

3 tablespoon olive oil
5 large shallots or green onions thinly sli; ced
4 slices french bread (3x5)
1 freshly grated romano cheese
1 freshly ground black pepper

Instructions

Preheat broiler. Heat oil in a heavy small skillet over medium heat.

Add shallots and saute till tender, stirring frequently, about 5 minutes.

Broil one side of the bread until toasted. Spread shallot mixture on second side of bread. Sprinkle generousely with pepper and cheese. Broil until beginning to brown. Serve immediately.
