Recipe for Spiced Cider Wassail Bowl


8 cup cider
2 each cinnamon sticks
10 each allspice berries
8 each whole cloves
1/4 cup dark brown sugar
2 cup orange juice
1 tablespoon lemon juice
1 cup dark rum
1/2 cup brandy
1 orange slices for garnish


In a large pan, combine the cider, whole spices and sugar. Bring to a simmer over medium heat and cook gently for about 5 minutes, stirring to dissolve sugar. (This base can be made 2 to 3 days ahead. Refrigerate.) Stir in orange juice, lemon juice, rum and brandy. Heat gently. When ready to serve, float orange slice in wassail. Ladle hot wassail into small punch cups or demitasse coffee cups, serving directly from the stove or placing on a warming try in the dining room.
