Recipe for Tomaot & Hot Green Pepper Salad, Essaouira Style


4 large tomatoes, peeled, seeded & - cubed
4 each green bell peppers, grilled, - seed; ed & diced
1 each cucumber, peeled, centre - core rem; oved & diced
1 tablespoon chili peppers, seeded & dice
1 salt & pepper
1 tablespoon lemon jiuice
3 tablespoon olive oil
2 tablespoon parsley, chopped
1/4 teaspoon cumin
2 each garlic cloves, chopped


Combine all the ingredients in a mixing bowl & blend gently. Refrigerate one hour before serving.
