Ingredients

1/3 cup dry white wine
1/3 cup tarragon vinegar
1/4 cup chopped green onions *
1 teaspoon dried tarragon
2 sprigs fresh parsley
1/4 teaspoon whole black peppercorns
1 tablespoon water
2 tablespoon fresh lemon juice
4 large egg yolks
2 tablespoon melted butter
1/4 teaspoon cayenne

Instructions

* Green onions should be finely chopped along with some tops.
