Recipe for Old-Fashioned Sweet Potato Pie


2 1/4 cup cooked sweet potatoes, mashed
1/2 cup butter or margarine
1 1/4 cup sugar
1 tablespoon flour
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
2 eggs, beaten
2 (5 1/3-oz) canned evaporated milk
2/3 cup milk
9 inch unbaked pastry shells


Combine sweet potatoes and butter, mixing until blended. Add combined sugar, flour and spices: mix well. Blend in eggs and milk. Pour into crusts. Bake 10 minutes (I think at 400 degrees F, I lost my original recipe), reduce oven to 350 degrees F., continue baking 50 to 60 minutes or until knife inserted in center comes out clean.
