Recipe for Glens Chile


3 lb coarsely ground beef chuck
1 cup chopped red chile
3 tablespoon chile powder
1/2 teaspoon oregano
1 pepper to taste
12 oz tomato paste
3 medium onions, chopped
2 garlic cloves, minced
1 tablespoon salt
1/4 teaspoon cumin seed
1 quart water
32 oz canned kidney beans


Brown meat in large, heavy iorn skillet. Add onions, red pepper and garlic;saute until onions are limp. Stir in chile powder, salt, oregano, cumin and pepper to taste. Add water and tomato paste; simmer 1 1/2 hour or longer. Add beans and simmer 30 minutes. Taste and adjust seasonings. When correct, cool and store at least 24 hours before serving.
