Recipe for Gnocchi With Pesto And Peas


2 medium boiling potatoes
1 lb frozen potato gnocchi
1 jar (10 oz) pesto sauce
1 cup frozen peas, thawed
1/3 cup grated parmesan cheese


1. Preheat the broiler. Peel and dice the potatoes.

2. Bring a large pot of salted water and the potatoes to a boil. When the water boils, add the frozen gnocchi and cook, uncovered, until the gnocchi float to the top of the water, about 2 min. Drain the gnocchi and potatoes.

3. Gently toss the gnocchi and potatoes with the pesto sauce and peas. Spoon the gnocchi into a 1 1/2-quart shallow flameproof dish and sprinkle with Parmesan cheese.

4. Broil about 4-inches from the heat for 1-2 min, until the cheese is lightly browned and bubbly.
