Recipe for Poppy Seed Cake


1/2 C Butter, softened
1 C Honey
2 Egg yolks
2 t Vanilla extract
2-1/2 C Cake flour
2-1/4 t Baking powder
1/2 t Salt
1 C Milk
1/2 C Poppy seeds
4 Egg whites, stiffly beaten
Pinch salt


Preheat oven to 350F. Grease and flour two 8-inch cake pans.

Stir together the flour, baking powder and salt and poppy seeds. Set aside.

Cream together butter and honey. Add the egg yolks, one at a time, beating well after each addition. Beat in the vanilla. Add the dry ingredients, alternating with milk, beating well after each addition.

Fold in the beaten egg whites. Pour into prepared pans. Bake at 350F for 30 minutes or until cake tester comes out clean.
